Cut and discard any yellowish fat or loose membrane attached to the tripe. Combine vinegar and salt in a bowl, add tripe and enough cold water to cover.

In a pot over medium heat, add beef tripe and enough water to cover it. Bring to a boil for about 10 to 15 minutes, skimming off any scum that rises.

In a large pot over medium heat, sauté chopped onions, garlic, chorizo, and bacon until onions are softened and bacon renders fat.
