In a large mixing bowl, dissolve yeast and sugar in lukewarm water. Add 1/2 cup flour and whisk to form a loose mixture

Add the salt, olive oil, and remaining flour to the yeast mixture, stirring until the ingredients come together into a rough, sticky dough.

Transfer dough to a lightly floured surface and knead until smooth, about 10 minutes.

Deflate the dough and divide into 8 pieces. Shape each into a ball and let rest for 10 minutes. Roll each ball into a circle, 8-9 inches wide
