In a mixing bowl, blend the softened cream cheese until smooth. Add the remaining ingredients, except for the pecans, and mix to combine.

Add the diced onion, green bell pepper, red bell pepper, and minced garlic to the pot with the beef. Cook for another 5 minutes until the vegetables are softened.

Put the chopped pecans in a large shallow bowl. Carefully roll the cheese ball over the pecans to coat it. You can also use your hands to press the pecans onto it.

Wrap the cheese ball in cling wrap and refrigerate for about 1-3 hours to firm up before serving.
