Preheat oven to 375°F. Clean mushrooms with a damp cloth, carefully remove stems and finely chop them. Set caps aside.

Heat olive oil in a skillet over medium heat. Add chopped onion and mushroom stems, sauté until softened. Add garlic, cook for another minute. Remove from heat.

In a mixing bowl combine sautéed mixture, breadcrumbs, vegan cream cheese, nutritional yeast, parsley, thyme, salt and pepper.

Fill each mushroom cap generously with the stuffing mixture. Arrange on a lightly greased baking sheet.
