Pat the salmon fillets dry with paper towels. Season the skin with salt and black pepper.

Heat half of the olive oil in a skillet over medium-high heat until shimmering and hot. Place salmon fillets skin side down in the skillet.

Brush the top of the salmon with the remaining oil and sprinkle on more salt and pepper.
