Cut the avocado in half, remove the seed, and scoop the insides into a food processor or blender.

Add the apple cider vinegar, lemon juice, Dijon mustard, minced garlic, and 2 tablespoons of the oil to the food processor or blender.

If a creamier texture is desired, add the remaining tablespoon of oil and blend again. Season with salt to taste.
