SNACK ATTACK.
Seriously though. Snack attacks are a very real thing that happens in my life.
And, since snack recipes are the FOR SURE HANDS DOWN NUMBA 1 most requested kinds of recipes here on FFF, I know that snack attacks also very much exist in YOUR LIFE.
But, I need to be honest with you peeps. I always feel “weird” about posting the things that I eat for snacks because, ummm, they aren’t REALLY recipes. It’s more like “add a few already made things together and season to taste with random spices.” <– If I wrote that and tried to call it a recipe, ya’ll would probably SHOOT ME.
Hopefully that’s a BIT extreme though.
So, I want to start a fun new monthly post: Super-Simple Snack Ideas.
Once a month I’m going to give you a post with 3-5 snack SUPER-SIMPLE snack “ideas” (because they’re not 100% recipes – more just suggestions) with one start ingredient that will be the star of each idea. I really hope that these posts will be helpful to all of you who are requesting snack ideas, as that is the whole purpose of this new series! Some of these snacks won’t be new to some of you peeps, but I hope that you find a few new ideas!
So, I wanted to start the first post with a BANG.
Naturally, avocados. Because <3<3<3.
Let’s snack!
Baked Eggs in Avocado
- Avocado
- Egg
- Salt/pepper
Simply cut an avocado in half and scoop out a large circle in the middle. Crack an egg into the circle and sprinkle with salt and pepper. Place on a small baking sheet and bake at 350 degrees for 20-30 minutes, or until your egg is as cooked as you like it! When I’m feeling CARAYZAY, I like to sprinkle on some cheddar cheese before baking. Then, once it’s done, I drizzle some BBQ sauce and cilantro on top. AMAZING.
Curried Avocado Chicken Salad Crackers
- Avocado
- Shredded chicken breast (any leftover chicken you have works great!)
- Salt/pepper
- Curry Powder
- Cilantro
- Crackers (or bread works too)
- OPTIONAL: Sriracha
In a small bowl, mash some avocado and then stir in some shredded chicken. Season to taste with salt, pepper, curry powder and optional sriracha. Place onto crackers and sprinkle with cilantro (or just dice cilantro and stir it into the avocado if you don’t want to be fancy!).
Protein Packed Cheesy Avocado Turkey Roll-Ups
- Organic turkey deli meat (I like mesquite smoked for extra flavor)
- Avocado
- Light spreadable cheese (I used The Laughing Cow) OR you can use thinly sliced cheese.
Place two pieces of lunch meat on top of each other (if your meat is really thick, you can probably use one slice, but I prefer 2) and then spread with mashed avocado all over. Spread a thick line of spreadable cheese down the center of the avocado and roll up!
Avocado Egg Salad
- Avocado
- 1 boiled egg (I like soft boiled. And just egg whites works too if you want extra protien)
- Salt/pepper
- Spices of choice (I typically just like onion and garlic powder)
- OPTIONAL: bread or crackers.
Mashed the avocado and egg together in a bowl and season to taste with salt, pepper and whatever other spices you want. I really like eating this just with a spoon, but you could totally put it on crackers or bread! It’s even great as a sandwich for a lunch idea.
Avocado Egg Toast
- Toasted gluten free bread
- Avocado
- Soft boiled egg
- Salt/pepper
Yes, everyone knows avocado egg toast but, If you’ve ever seen my Instagram, you know that I am saving the BEST for last. Seriously, I eat avocado egg toast ALL THE TIME. I am addicted.
Simply spread some mashed avocado onto the toasted bread and then slice your soft boiled egg, laying it onto of the bread. Season with a pinch of salt and pepper and go to food heaven.
