These protein pancakes are made in the microwave so you can have them on busy mornings! They’re only 210 calories, 25 g of protein and are so healthy and tasty!
I can tell you without a SHADOW OF A DOUBT that today is going to be the best day that has ever happened to your face in ALL THE YEARS that your feet have been a-walkin’ this very thing we call EARTH.
You know WHY? Because I will give you a recipe of pancakes made in the MICROWAVE 🙂
I know. Your brain is doing the EXACT same thing that mine did when this idea came into it. CAN IT BE TRUE? Can it actually BE GOOD?
And, peeps, Y to the ES. Microwave pancakes are totally A THING. Pancakes that you can make ON A WORK DAY, and also happen to be grain free and full of melty, ooey chocolate and peanut butter goodness for ONLY around 210 calories and 25 grams of protein?
Basically, it’s what I am expecting to eat for breakfast in Heaven. <— That much yum.
What do those pancakes taste like
I won’t lie to you, the texture isn’t as LIGHT AND FLUFFY as a regular, griddle-cooked pancake, like those apple healthy oatmeal protein pancakes with Greek Yogurt. But, on those mornings when you need PANCAKES NOW, but don’t have time to make such things as paleo pancakes from Noshtastic, It does the TRICK.
And, if you need your breakfast circles (Taylor speak for: pancakes) to be golden brown and fluffy, I have also made them the traditional way. ALL THE WAYS POINT TO PEANUT BUTTER AND CHOCOLATE GREATNESS.
INGREDIENTS
- 1/4 CupPeanut flour
- 2 Tbsp Vanilla protein powder
- 1 TbspTruvia
- 1/2 tsp Baking powder
- 1/4 tsp Cinnamon
- Pinch Salt
- 1 Large egg white
- 2 Tbsp Non-fat Plain Greek yogurt
- 1/8 tsp Vanilla extract
- 3/4 tsp Apple Cider Vinegar
- 1/2 Tbsp Mini chocolate chips
INSTRUCTIONS
- In a medium bowl, mix together the peanut flour, protein powder, Truvia, baking powder, cinnamon and salt until well combined. Set aside.
- In a separate small bowl, whisk together the egg white, Greek yogurt, vanilla extract and apple cider vinegar until smooth.
- Pour the Greek yogurt mixture, along with the chocolate chips, into the peanut flour mixture and stir until evenly combined. The batter will be very thick. Let stand 5 minutes.
- Spray a small microwave-safe plate with cooking spray and place 1/4 of the batter (which should be exactly half of the batter) onto the center. Lightly spread out so that it’s about 1 inch high. Resist the urge to spread out more, as the pancake flattens while cooking.
- Microwave for 40 seconds, or until the top looks set. Let stand for 30 seconds and then transfer to a plate. Repeat with the remaining batter. *
- Top with peanut butter, syrup or DEVOUR as is!
TIPS & NOTES:
Cooking time may vary depending on the wattage of your microwave. Mine is 1000 watts, and the pancakes are perfect at 40 seconds. Fiddle with yours until you get it perfect.
TO COOK ON A GRIDDLE:
I won’t lie, these are not the same texture as pancakes but they totally do the trick in a pinch. If you need that light and fluffy, golden brown pancake experience you can easily cook these on a griddle on medium-low heat, for about 5-7 minutes per side!
If that doesn’t scream breakfast of champions, I don’t know what to tell ya.
