This grilled corn salad is a quick and easy side dish that healthy, gluten free and has a little bit of a Southwestern kick!
I am officially back from our vacay to the land of cheese curds and beer (Wisconsin)
I must say that it was lovely to get away.
Side note: I’m a poet and I didn’t even know it.
How-ev-er, it’s actually really nice to be back into daily life, blogging and working out.
I really am the worst relaxer ya’ll. I need to chill out, and not love scheduled life, but I CAN’T DO IT. Ugh.
It was SO good to see the fam though, and I’ll share some photos at a later date. I promise.
But, for now, I have a better idea.
It involves food. We know that talking about yum > talking about anything else right?
Remember when we talked Taco Salads and my hatred of leftovers? Well, this was another lucky day when all my leftovers MADE SENSE.
Side note, the sequel: Apparently I have a secret obsession with Mexican flavours, because anytime I have leftovers I seem to go in that direction.
I also tend to make salads. <3
But, can you blame me? THE YUM.
You know that mad dash to eat-ALL-the-leftovers-so-nothing-goes-bad-before-going-on-vacation? That was this salad.
Except, then I made too much and we were all eat-all-the-leftovers-of-what-was-supposed-to-be-the-meal-to-use-up-all-the-leftovers.
That was confusing. But, you get it. Maybe.
Mr. FFF was even eating corn salad on his Cheerios guys.
But, I also can’t confirm or deny that I am lying to you. Just know that there was a lot of salad munchin’.
Now, if you also have a subconscious that likes Fiestas AND Siestas, you may find that you have ALL the ingredients for this beauty RIGHT IN YOUR REFRIGERATOR.
And, if you don’t, grow them.
And, if you kill things/are really lazy like me, grocery stores are your best friend forevaaaa.
And, if you live in Canada where we have no grocery stores…then, I can’t help you.
Just kidding, we need somewhere to sell our Maple Syrup.
Ok. Salad. Are you tracking with me? Probably not.
I have to tell you that grilling your veggies brings that smokey, good to the last drop (except there’s no coffee and now your’re confused) taste-a-licious factor to this salad.
HOW-EV-ER, the roasted jalapeno vinaigrette-that-isn’t-really-a-vinaigrette-at-all-because-it’s-thick-and-chunky-but-that-didn’t-sound-yum-in-the-recipe-title is really what bring this salad to LYFE YO.
And, if you don’t want to eat the grilly goodness all by it’s lonesome…
