These healthy breakfast cookies have no butter, oil or gluten! They’re so quick and easy and made with  yogurt for an extra protein boost!

What are you all doing tonight? Do you have supah-big-partAY-plans? Are you keeping it LOW KEY?
We’re just heading up to Canada (again) to go for dinner at Korean BBQ/All you can eat sushi joint in downtown Vancouver. Then, watching the NYE specials with my parents and making a few drinks.
Tonight is the last day to LIVE IT UP because you know what tomorrow is right?
The day that I can no longer find a parking spot at the gym, and actually have to WAIT FOR MACHINES because it’s the start of NEW YEARS RESOLUTIONS babay!
Now. I know that you’ve been eating ginger snaps, gluten free shortbread cookies, spiced paleo cookies and all kind of baked goods for the past month or so and I don’t want to throw any kind of kale salad recipe, or anything too healthy LOOKING at your face.
I wouldn’t want to overwhelm you so early in the Resolution game yaknow?
SO, we’re still eating cookies. BUT, they’re super secret ninja cookies because they’re healthy breakfast cookies full superfood-a-liciousness and PROTEIIIINNN.
You know that protein is the key to my heart.
So much so, that I am FAIRLY confident that if the Huberoni got down on one knee and pulled out a box of protein powder instead of a ring, I probably would have still said yes.
I could be lying though. They don’t say diamonds are a girl best friend for NUTHIN.
Anyway. Protein. I like it.
Especially when it’s all up inside some breakfast cookies. Gluten free cookies that I can munch for BREAKFAST. <— BING BING BING.
That’s the sound of the breakfast winner bell.
To bring the protein POW to these breakfast cookies, I used Siggi’s yogurt which is an Icelandic-Style strained yogurt that is made with simple (non-artificial!) ingredients, and not a lot of sugar. It’s the perfect swap for fat in these cookies, instead of oil or avocado like in the paleo breakfast avocado cookies with kale!
You guys. Have you tried this yogurt? It is creamy x eleventy billion and twelve, has 14 grams of protein (!!!) and has so many fun flavors.
Like the yogurt, the rest of the cookie is made with easy peasy lemon squeezey, simple ingredients (but no peas or lemons, don’t get confused) that you probably already have chillin’ in your pantry.
What I’m really trying to get at here is that It’s basically a big healthy-cookie-yogurt part-ay.

Ingredients
- 1/2 Cup Blueberry Siggi's Yogurt
- 1/2 Cup banana mashed (about 1 large)
- 1/4 Cup Honey
- 1 Cup dates roughly chopped (140g)
- 1 Large egg white
- 1/2 tsp Vanilla extract
- 1 Cup Rolled old fashioned oatmeal (gluten free, if needed)
- 1 Cup Oat flour
- 1/2 tsp Ginger powder
- 2 tsp Cinnamon
- 1/2 tsp Baking powder
- 1/4 tsp Salt
- 1/2 Cup Slivered almonds
- 1/4 Cup + 2 Tbsp Pomegranate Seeds
- For the "frosting:"
- 2-3 Tbsp Siggi's Blueberry yogurt
- 2 Tbsp Vanilla protein powder
Instructions
- Preheat you oven to 350 degrees and line a baking sheet with parchment paper.
- Add the yogurt, banana, honey, dates, egg white and vanilla into a small food processor. Process until the dates have broken down into small pieces.
- In a large mixing bowl, mix together the oats, oat flour, ginger, cinnamon, baking powder, salt and slivered almonds.
- Stir the yogurt mixture into the oat mixture until well combined. Then, gently stir in the pomegranate seeds. Your dough will be quite wet.
- Drop the dough onto the prepared cookie sheet by a 1/4 cup. Flatten with a fork.
- Bake until the cookies feel just set, about 12 - 13 minutes. Immediately transfer them to a cooling rack to cool completely.
- Once the cookies are cooled, stir together the remaining yogurt and protein powder*.
- Swirl onto the cookies (I used a piping bag) and DEVOUR.
